Creamy garlic seafood pasta

I’m normally not really big on fish, the whole ‘steamed fish and veg’ thing doesn’t really appeal to me. I thought I’d change it up and try and incorporate fish into a yummy dish as its definite a food group that my diet is lacking.

Serves 1

-75g pasta

-1 cod/haddock fillet (de-boned and preferable de-skinned)

-1 portion of ready cooked prawns (around 6)

-1 tablespoon natural yoghurt

-1 clove of garlic

-A handful of mushrooms

-A handful of green beans

-A teaspoon of Italian herbs

-A squeeze of lemon juice

-Half a teaspoon chilli flakes

-A couple of sprigs of coriander

-1 tablespoon coconut oil

-A tablespoon grated parmesan

-A handful of spinach


  1. Start by cooking the pasta according to the instructions on the back of the packet. Chop your garlic, green beans and mushrooms. Heat the coconut oil in a large frying pan and add all your chopped ingredients.
  2. While its frying away, slice your white fish into chunks. Add to the pan along with the prawns and stir to combine.
  3. Sprinkle the Italian herbs and chilli flakes to the mix, then add the Greek yogurt to create a creamy sauce then stir in the spinach until wilted.
  4. Drain the cooked pasta, add to the pan and stir. Add the chopped coriander and a squeeze of lemon juice, then serve with a sprinkle of parmasian cheese!
