This low carb, high fat recipe is great for days you didn’t manage to get a workout in or just haven’t made it to the gym yet! Its full of protein and energy to get you going for the day. 🙂
-1/2 an avocado
-an inch long section of chorizo
-a handful of mushrooms
-a handful of spinach
-a teaspoon of pesto
-salt and pepper
-a teaspoon of grated parmesan cheese
-1 teaspoon coconut oil
- Heat the oil in a medium saucepan on a medium heat. While its warming up, chop the mushroom and chorizo then add to the pan.
- Crack both the eggs into the pan and stir with a fork straight away to scramble the eggs. Keep stirring until the eggs are nearly cooked.
- add the spinach and pesto and stir until the spinach is wilted.
- Pop on a plate, then slice your avocado and put it next to your scrambled egg. Top with salt and pepper to taste then finish with a sprinkle of parmesan cheese.
That’s your fancy scrambled egg ready to go!
