Fancy scrambled egg

This low carb, high fat recipe is great for days you didn’t manage to get a workout in or just haven’t made it to the gym yet! Its full of protein and energy to get you going for the day. 🙂

Serves 1

Ingredients:

-2 eggs

-1/2 an avocado

-an inch long section of chorizo

-a handful of mushrooms

-a handful of spinach

-a teaspoon of pesto

-salt and pepper

-a teaspoon of grated parmesan cheese

-1 teaspoon coconut oil

Method:

  1. Heat the oil in a medium saucepan on a medium heat. While its warming up, chop the mushroom and chorizo then add to the pan.
  2. Crack both the eggs into the pan and stir with a fork straight away to scramble the eggs. Keep stirring until the eggs are nearly cooked.
  3. add the spinach and pesto and stir until the spinach is wilted.
  4. Pop on a plate, then slice your avocado and put it next to your scrambled egg. Top with salt and pepper to taste then finish with a sprinkle of parmesan cheese.

That’s your fancy scrambled egg ready to go!
