This is genuinely such a quick and easy dinner, it’s SO full of flavour, I wouldn’t be disappointed if I was served this in a restaurant.
-1 clove of garlic
-2 sundried tomatoes
-A 2 inch long section of chorizo
-75g pasta (I used gluten free)
-1 Tablespoon Greek yoghurt or double cream
-A handful of spinach
-A handful cherry tomatoes
-1 Tablespoon tomato puree
-1 Teaspoon Italian herbs
-1 Tablespoon coconut oil
-A tablespoon grated parmesan cheese
- Dice the garlic and sundried tomato into tiny pieces. Chop the sausage, chorizo and tomatoes into bite sized pieces and set to one side.
- Start cooking the pasta according to the instructions on the packet. Then heat the oil in a frying pan on a medium heat. Once warmed up, Add the garlic, sundried tomato and sausage. Stir until the sausage begins to brown, then add the tomatoes and chorizo.
- Add the tomato puree, the Italian herbs and the Greek yoghurt (or cream) and stir to create a bit of a sauce.
- Add the spinach and stir until wilted. Drain the cooked pasta and add to the pan, stirring until combined and evenly coated in sauce. Plate up and finish with a sprinkle of parmesan cheese!
