Italian sausage pasta

This is genuinely such a quick and easy dinner, it’s SO full of flavour, I wouldn’t be disappointed if I was served this in a restaurant.

Serves 1


-1 clove of garlic

-2 sundried tomatoes

-A 2 inch long section of chorizo

-2 sausages

-75g pasta (I used gluten free)

-1 Tablespoon Greek yoghurt or double cream

-A handful of spinach

-A handful cherry tomatoes

-1 Tablespoon tomato puree

-1 Teaspoon Italian herbs

-1 Tablespoon coconut oil

-A tablespoon grated parmesan cheese



  1. Dice the garlic and sundried tomato into tiny pieces. Chop the sausage, chorizo and tomatoes into bite sized pieces and set to one side.
  2. Start cooking the pasta according to the instructions on the packet. Then heat the oil in a frying pan on a medium heat. Once warmed up, Add the garlic, sundried tomato and sausage. Stir until the sausage begins to brown, then add the tomatoes and chorizo.
  3. Add the tomato puree, the Italian herbs  and the Greek yoghurt (or cream) and stir to create a bit of a sauce.
  4. Add the spinach and stir until wilted. Drain the cooked pasta and add to the pan, stirring until combined and evenly coated in sauce. Plate up and finish with a sprinkle of parmesan cheese!
