Super healthy and nice and sweet, this chicken dish will kill those sweet cravings while filling you with nutritious goodness!
-2 chicken thighs
-a tablespoon of honey
-juice of half a lemon
-1 clove of garlic
-A sprig of coriander
-A handful of sugar snap peas
-Half a bag of microwaveable rice (I use Uncle Benn’s chicken style with grains)
-A pinch of salt and pepper
-A tablespoon coconut oil
- Heat the coconut oil in a medium frying pan over a low heat. Dice the garlic and chop the sugar snap peas and pop into the pan.
- Slice the chicken into strips and add to the pan along with the honey, lemon juice and coriander. Season with salt and pepper to taste.
- Whilst the chicken is cooking away, microwave the rice on a plate for 1 minute.
- Check the chicken is cooked through by cutting the largest strip in half and ensuring there are no pink bits. Serve on top up the rice and enjoy!
