Lemon and honey chicken

Super healthy and nice and sweet, this chicken dish will kill those sweet cravings while filling you with nutritious goodness!


-2 chicken thighs

-a tablespoon of honey

-juice of half a lemon

-1 clove of garlic

-A sprig of coriander

-A handful of sugar snap peas

-Half a bag of microwaveable rice (I use Uncle Benn’s chicken style with grains)

-A pinch of salt and pepper

-A tablespoon coconut oil


  1. Heat the coconut oil in a medium frying pan over a low heat. Dice the garlic and chop the sugar snap peas and pop into the pan.
  2. Slice the chicken into strips and add to the pan along with the honey, lemon juice and coriander. Season with salt and pepper to taste.
  3. Whilst the chicken is cooking away, microwave the rice on a plate for 1 minute.
  4. Check the chicken is cooked through by cutting the largest strip in half and ensuring there are no pink bits. Serve on top up the rice and enjoy!
