Tomato-ey sausage on a bed of lentils

Lentils are great because they’re a carbohydrate source that’s high in protein and potassium! They’re also crazy cheap so I want to try and start using them in loads more recipes 🙂

Serves 1


-A handful of lentils

-Two sausages

-A handful of cherry tomatoes

-Four mushrooms

-A handful of spinach

-A pinch of salt and pepper

-A splash of red wine (or cooking wine)

-Two tablespoons of tomato passata

-A teaspoon of steak seasoning

-A tablespoon of coconut oil


  1. Put the lentils in a small saucepan and cover with around three times their volume’s worth of boiling water. Leave to simmer on a low heat for 10-15 minutes while you prepare the other food.
  2. Chop to sausage into bite sized pieces along with the mushrooms. Heat the oil in a large frying pan and add the sausage and mushroom to the pan.
  3. Add the tomatoes, red wine and spinach and stir until the spinach has wilted and the wine has reduced, then add the passata and steak seasoning to create a bit of a sauce.
  4. When the lentils are cooked (They will be soft through) pop them on a plate as a sort of bed then spoon the sausage and sauce on top. Season with salt and pepper to taste.lentil-sausage-zoom
